			<content:encoded><![CDATA[<p>Some people call themselves a lab just for the sound of it. I spent half a year in a true coffee lab in Waterbury, Vermont where we cupped coffee daily for the specialty market and also larger companies who sell their coffee out of supermarkets.</p>
<p>I learned a lot about the science of coffee while at the lab; I learned how to seek out and capture the sweet spot in the beans that came through the roastery and develop profiles that would consistently bring out the very best of the beans I was roasting.<br />

It is easy to call yourself a lab, but not so easy to actually meet the rigorous demands of a true coffee lab. The equipment alone could be prohibitive. While I learned to roast from the non-technical side of roasting, using my ears, eyes, and nose, I enjoyed rounding out my experience in such a technical environment.  It was there I met the Guildners&#8211; the folks who built our Renegade roaster. The programability of our roaster allows us unparalleled control and consistency. But all of that would be nothing if I hadn&#8217;t already learned how to roast using a variety of more primitive machines.</p>
<p>Our experience, from planting, growing, harvesting, and processing our own coffee on Lake Atitlan Guatemala, is what allows us to offer you some of the most consistently delicious coffee available here in Tucson and beyond.  It is easy to call one self  a lab just for the way it sounds; it is quite different to have actually worked in a lab and to bring that experience to every roast.</p>
